I have an OS .32 and .37 non-ringed. One guy at my club is telling me I'm running too lean but the engine is set up as the manual said. His test is to put you finger on the backplate of the engine right after a run and hold your finger there for 5 seconds. If you can't than it's too lean. Anyone have any opionions as to how hot it too hot?

The finger on the backplate is the most tried and true test. If you can hold your finger there for 3-5 seconds with no problem, your tuning is good. Any longer and your too rich, any shorter and your too lean. If you don't have a temp meter then this is the best method and some prefer this over a temp meter.
